Abstrakt | The present study demonstrates the reasons for the foundation of tea plantations and conditions of their cultivation. The limitations and negative consequences of cultivation of tea plants along with the ideas for their minimization are shown. Plantations were created to optimize the harvest. However, it has been found that they negatively influence local ecosystems. The global demand for tea leaves is constantly growing. Due to the specific climate requirements of tea plants and progressive climate changes, the arable land area suitable for their cultivation is constantly decreasing. New solutions should be implemented as soon as possible, ensuring a constant supply of raw material. Otherwise, in the next few years tea may become a luxury product. FAO has presented the activities that could reduce the losses. At the moment, the best solution might be to change crop types and diversify sources of raw material. It is also highlighted that there is a need to carry out research aiming at developing varieties of Camella sinensis with lower climate requirements. |

Abstrakt | The objective of this study was comparing the scale of food waste depending on different types of households among Poles living in Poland and in the UK. The research was conducted in the group of 622 persons, whereas 345 persons lived in Poland and 277 were residing in the UK for minimum 2 years, however not longer than 10 years. The respondents were differentiated depending on the type of the household in which they lived: 1-person, 2-person, 3-person, 4-person and more. More than the half of the respondents declared that they had happened to throw away food, whereas these are the “British” Poles who waste food most and who are comprised in 1- and 2-person households. A significant dependence was observed in both studied groups, the more numerous the household was the lesser amount of food was wasted. The mostly wasted food included bread, yoghurts, sausage, fruit and vegetables, regardless of the number of persons in the given household or of the place of residence. Due to the fact that the rate of food waste is so high, it is necessary to find a way to implement new ideas and interventions which would limit the food waste in the households. |

Abstrakt | Proszek pozyskiwany z nasion karobowych, zwany inaczej mączką chleba świętojańskiego, ma szerokie zastosowanie przemysłowe. Spełnia funkcję zagęstnika, stabilizatora, w odpowiednich warunkach substancji żelującej oraz nośnika. Wielu konsumentów ocenia karob jako produkt, który ze względu na swój smak i aromat może niejednokrotnie stanowić substytut kakao. W klimacie śródziemnomorskim, gdzie występuje karob, mączka chleba świętojańskiego stanowi główny surowiec do produkcji słodyczy. Celem tej pracy było wskazanie możliwości wykorzystania karobu jako dodatku o działaniu prozdrowotnym i tym samym potencjalnym składniku funkcjonalnym w żywności (o znaczeniu innym niż technologiczne bądź sensoryczne). |
Abstract | Carob flour is produced from carob seeds and can be widely utilized in the food industry. It is mainly used as a thickener or stabilizer, and in certain conditions can have gel-forming abilities and is used as a medium (mainly for flavour). Many consumers consider carob flour as a cocoa substitute thanks to its flavour and aroma. In Mediterranean climates, which is the carob’s natural growth environment, carob flour is utilized in sweets production. The aim of this study was to point out possibilities of utilizing carob as a product that is beneficial to health, which should therefore be considered as a valuable resource in producing functional food. |

Abstrakt | The high level of competition between food products on the market has encouraged the development of various types of functional foods. Consumer demands and requirements for both medicinal and healthy products has caused food manufacturers to widen their product offerings. The objective of this study was to present the legal status of functional food production and sales, as well as analyse the possibilities of developing customized foods, in particular, highly satiating foods. In this time of obesity epidemic, the use of specifically designed food products which suppress hunger and give the feeling of satiety could be an effective tool in preventing obesity and controlling body mass. There is an optimistic prognoses that this type of food will be introduced on the Polish market. |
