| Title | Carbon Footprint of Beef Cattle in a Conventional Production System: a Case Study of a Large-Area Farming Enterprise in the Wielkopolska Region |
| Słowa kluczowe | carbon footprint, beef production, emission of greenhouse gases, life cycle assessment, agriculture |
| Key words | carbon footprint, beef production, emission of greenhouse gases, life cycle assessment, agriculture |
| Abstrakt | Animal production is a significant source of greenhouse gas (GHG) emissions. One of the major challenges in sustainable management is to mitigate the effects of climate change by reducing GHG emissions. The diversity of animal production systems and accompanying diversification of technological processes, mean that specific production effects can be obtained at different levels of GHG emissions. The aim of the study was to determine the carbon footprint (CF) of beef cattle grown in a conventional system (i.e. indoor confinement). The research was carried out on the beef cattle farm belonging to a large-area enterprise, Długie Stare Ltd. The beef cattle production system consisted of the following subsystems: a basic breeding herd (consisting of suckler cows, replacement heifers and calves up to 6.5 months), breeding heifers, breeding bulls and fattening bulls. The method of life cycle analysis (LCA) in the stages from "cradle-to-farmgate" was used to assess the GHG emissions associated with the production of beef cattle. The average CF in the entire beef cattle production system was 25.43 kg of CO2 kg-1 of live weight of marketed cattle, while in the individual subsystems of basic breeding herd, breeding heifers, breeding bulls and fattening bulls, the CF (after GHG allocation) was: 11.0 kg CO2 eq., 34.30 kg CO2 eq., 27.32 and 25.40 kg CO2 eq., respectively. GHG emissions associated with young calves staying in the cow-calf pairs until weaning (in the period from 0-6.5 months), had a decisive influence on the final CF in each of the subsystems of beef cattle production. The second important factor directly affecting the CF was GHG emissions related to methane (CH4) enteric fermentation and manure management. Knowledge of factors affecting the CF structure allows better identification of critical areas in production processes with high GHG emission potential. Information on the CF of beef cattle and beef meat responds to a wider societal demand for the ecological characteristics of market products, which ultimately contributes to improving their market competitiveness. |

| Key words | |
| Abstrakt | Within the framework of implementation of overarching national tasks, special attention is paid to the food production and the matter of keeping up with the consumer demand for quality food, which is of national significance. The poultry industry is able to make its fairly considerable contribution into solving the problems of the consumer demand for valuable healthy food products; and to create conditions for the national food security owing to this industry economic growth based on its production potential development and strengthening. The domestic and foreign practice clearly demonstrates that it is possible to provide the population with quality food within a relatively short term, primarily due to the increase of egg and poultry meat production. The poultry industry is not only the most dynamic and fast-growing branch of the livestock farming, but also it has the most intensive production methods. The aim of this article is to determine the influence and the role of the poultry industry on providing the population with food supplies in present-day conditions in the world. |

| Title | |
| Słowa kluczowe | food adulteration, mislabelling, meat and meat products |
| Key words | |
| Abstrakt | The aim of this paper was to recognize the scale and types of the food adulteration practices associated with meat and meat products from Poland. The vulnerability of food supply chains to fraud/adulteration is growing as a result of globalisation, which is expanding the scope and scale of the incidence of food fraud/adulteration. Both the intentional and unintentional adulteration of food can lead to a public health threat, and cause severe economic consequences. Meat and meat products are the most common targets for adulteration in Poland and the EU. Since meat and meat products hold a key position in food production and consumption in Poland, it is in both the industry’s and government’s interests to eliminate adulteration in the meat supply chain. The methodological approach was to first review the literature to define and outline the challenge of food adulteration, and then to build a database on the basis of IJHARS decisions regarding adulterated meat and meat products, and to analyse them in detail. An analysis of the data revealed that most cases infringed Article 7.1(a) of Regulation (EU) 1169/2011 on the provision of food information to consumers concerning fair information practices. |

| Key words | |
| Abstrakt | This paper attempts to analyse the changes in labour and land productivity in agriculture in Poland resulting from changes to the production structures in this sector, particularly changes in the relationships between production factors, i.e. land, labour and capital. The analysis covered the years 2002–2016. It was found that this period saw important changes in agriculture expressed in the concentration of agrarian structure and the progressive substitution of land and labour by capital, which was reflected in the increase of work technical equipment and the rate of technical progress. There was also a progressive outflow of some of the labour resources from agriculture. A positive correlation between the productivity of land and labour and the said structural changes in agriculture was found. |

| Abstrakt | The purpose of this paper was to determine structural changes in Poland’s dairy industry and assess their impact on the efficiency of dairies. It was not until the mid-nineties that the process of concentrating milk processing and the rationalization of its production began in the country. Technical and economical work efficiency have improved. By also taking the dynamic increase in sales profitability into account, one can draw some positive conclusions about the intensive management seen within the dairy sector. Dairies should not only improve their position on the domestic and foreign markets, but also strengthen vertical integration with milk producers. |

| Abstrakt | The sugar industry, as one of the most regulated food industries in the EU, has been given great challenge due to the sugar quota elimination in 2017. Both in the Czech Republic and Poland, sugar industry underwent significant transformation over last 20 years and mainly after the EU accession. Due to EU’s 2006 sugar reform led to significant reduction in number of production facilities. In both countries, we observed improved production of sugar beet driven equally by intensification and extensification in Poland and by extensification forces in the Czech Republic. Reduction in number of refineries also decreased number of competitors which led to market concentration. Conducted Herfindahl-Hirschman analyses proved, that Polish market face lower level of concentration in comparison to Czech market, which is dominated mainly by Tereos TTD and Moravskoslezke curkovary. Even though Krajowa Spółka Cukrowa also dominate the Polish market, other producers also take advantage of their position. KSC is under the increasing competition of German sugar producers (Südzucker Polska; Pfeifer&Langen; Nordzucker Polska). |

| Abstrakt | The aim of the research was to determine the production costs in farms specializing in viticulture in the selected European Union countries in the period 2004–2015. It was found that there was a large variation in terms of the structure of production costs. In the analysed period, the majority of countries recorded an increase in total costs per 1 ha, which was mostly due to the year by year increase of the direct costs. In direct costs the plant protection had the largest share, followed by fertilization costs, while the lowest were the costs of pruning. The share of indirect costs in total costs was relatively high and on EU average reached 82%. |

| Key words | |
| Abstrakt | The article attempts to identify the dynamics and direction of the root plant market development in Poland in the period before and after accession to the European Union by defining resource-efficiency relations related to the cultivation of potatoes and sugar beet. The research was carried out in the years 1994–2016. Based on them, it turned out that despite the progressive process of concentration and specialization of production on the market of root crops in Poland, income efficiency (without subsidies), especially in the case of sugar beets, decreased significantly. In addition, the area of cultivation of both potatoes and sugar beet was systematically decreasing, which was partially compensated by the improvement in crops. As a result of these adjustments, sugar beet harvests were at a similar level throughout the entire period considered, while potato production decreased. |

| Abstrakt | In the paper was presented a comparative analysis of the impact on the environment of the life cycle assessment of boxes made of polypropylene, re-HDPE and cardboard, which are used to transport of dessert apples. For this purpose, the SimaPro 7.1 computer program and attached databases were used. The calculations were made for 48 trading circulations. The obtained results indicate that the biggest negative impact on the environment among the analysed packaging was caused by cardboard boxes. Also packaging from recycled material (re-HDPE) is less friendly to environment than boxes made from new polypropylene. The estimated environmental impact of polypropylene boxes was 4.42 Pt (eco-indicator point), for re- HDPE and cardboard packaging it was 7.5 and 19.7% higher, respectively. The most important factor for the differences between the boxes was the durability of the packaging and the eventual need for multiple repeats of production phase, which include the acquisition of raw materials and processes related to the manufacturing of products. |

| Słowa kluczowe | short food supply chain, supply chain management, sustainable development |
| Key words | |
| Abstrakt | Within the framework of the paper, the author introduces issues connected to short food supply chains. There are many different forms of short food supply chains (SFSC), but they share a common characteristic of reduced numbers of intermediaries between the farmer or food producer, and the consumer. The growing interest in SFSCs is shown in the paper – this reflects mainly the consumer demand for quality and traceability, given the alarming health crises in food markets. From a customers’ point of view, SFSCs transfer more complete information about the origin of the food and, for producers, SFSCs retain a higher share of added value. The overview on the impact of short supply chains is provided in the paper. The results of the analysis show that the supply chain may have some beneficial economic effects. It is noticed that the SFSCs have potential to increase farm value added (profit allocation), promote sustainable farming systems, diversify production and contribute to local economic development. |

| Key words | |
| Abstrakt | Turkey’s bio-diversity, geographical structure and climatic conditions, makes it possible to produce a wide variety of fruits and vegetables. Although, the high production capacity, half of the vegetables and fruits are lost during the supply chain processes from farmer to the end consumer because of the long and complex structure of the supply chain. At the same time the current supply chain structure leads to huge gaps between producer and consumer prices. The aim of this study is to determine the structure of the fresh fruit and vegetable supply chain in Turkey and develop alternative supply chain forms to prevent the “price differences” and “product losses” from farmer to the final consumer. The study included descriptive analyses with secondary data as well as literature review. In addition, this study emphasizes the asymmetric power relationship in the agricultural supply chain. The asymmetric power relationship is explained by the price differences between the farmer and the final consumer. The research findings suggest that the transition from the existing multi-intermediated supply chain to the non-intermediated model must be done in a gradual way and through strengthening of the farmers. |

W strukturze zagospodarowania tych owoców dominuje przetwórstwo (produkcja soku zagęszczonego), następnie export i bezpośrednie spożycie. Zwiększenie wartości współczynnika opłacalności produkcji jabłek wymaga stałej optymalizacji warunków uprawy, wprowadzenia koncepcji logistyki do sprawnego zarządzania zaopatrzeniem, produkcją i dystrybucją oraz poszukiwania nowych rynków zbytu i efektywnych sposobów zagospodarowania nadpodaży owoców. |
| Abstract | The aim of this paper was to assess the environmental and economic conditions of apple cultivation in Poland, including soil and climate conditions, production level and its profitability, the structure of management based on source materials using a descriptive and comparative method. Due to good soil and climatic conditions, Poland is the largest producer of apples in the EU and one of the largest in the world. In the utilization structure of these fruits is dominated by food processing (especially production of concentrated juice), followed by export and direct consumption. Increasing the values of profitability production index, requires optimization of cultivation conditions, introduction of the logistics concept for efficient management of supply, production and distribution as well as searching for new markets and effective ways of managing the oversupply of fruit. |

| Abstrakt | A systematic analysis of trends in the development of organic products in Ukraine and Poland was carried out, which showed that the total area of certified ecological lands for the study period from 2006-2016 in Ukraine increased by 1.7 times, and in Poland from 2004-2014 it increased by 12 times. It has been established that the most significant impact on qualitative structural changes in the economic sector is adjustment to European standards that establish a favorable system of agricultural production regulation, marking and inspection of organic products. This is why Poland, while being in the European Union, has a significant advantage over Ukraine. The system of control and certification by the authorized bodies is generalized, as well as the mechanism of financial support for organic agricultural production. The necessity of using the experience of Poland with the purpose of greening agriculture and development of organic agricultural production in Ukraine is emphasized. |

| Abstract | In the paper the production of milk in Poland and factors shaping it was analyzed against the background of the EU. The analysis shows that milk production in Poland after EU accession increased. The reasons for this phenomenon should be seen in the changes that took place in the milk market and were related to European integration, the quota system and adaptation to EU standards in the field of animal welfare. The tabular, graphical and descriptive methods were used in the analysis of the results. A statistical analysis which was carried out in the work, shows that the Euro-PLN exchange rate is the main determining factor in milk production in Poland. |

| Title | Tendencies in the Global Butter and Cheese Markets and in Poland in the years 2001-2017 |
| Słowa kluczowe | masło, ser, produkcja, zużycie krajowe, nadwyżki rynkowe |
| Key words | butter, cheese, production, domestic consumption, market surpluses |
Względnie zrównoważona produkcja i spożycie występowały w Indiach, Pakistanie, USA i Brazylii. |
| Abstract | Changes in production and trends in shortages / market surpluses of butter and cheese in the world and in Poland in 2001-2017 were presented. Market surplus of butter increased in New Zealand, EU and Belarus, and decreased in Australia and Ukraine. Shortages grew in China, Mexico, Iran and Turkey, and decreased in Russia and Canada. Relatively balanced production and consumption occurred in India, Pakistan, the USA and Brazil. On the cheese market, surplus grew in: EU, USA, New Zealand, Argentina and Belarus, and decreased in Australia and Ukraine. The shortages grew in: Russia, Brazil, Mexico. In Poland, there were surpluses in butter and cheese production, which resulted in growing exports, directed mainly to EU countries. Prices of butter and cheese in EU countries and on the world market were characterized by convergence. At the beginning of the analyzed period, butter prices in the EU were 134% higher than on the world market, and cheese prices were higher by 92.6%, and in 2017 these differences were respectively 6% and 0.6%. |

| Title | Assessment of Organizational and Production Changes in Polish Agriculture in the Context of Selected Environmental Impacts |
| Słowa kluczowe | zmiany organizacyjno-produkcyjne, produkcja rolnicza, oddziaływanie środowiskowe |
| Key words | organizational-production changes, agricultural production, environmental impact |
| Abstrakt | W pracy dokonano oceny zmian organizacyjnych i produkcyjności w polskim rolnictwie w kontekście wybranych oddziaływań środowiskowych, tj. salda bilansu azotu brutto. Dla wskazania zachodzących tendencji porównywano zmiany pomiędzy okresem lat 2002-2004 a latami 2014-2016. Badania wykazały, że mimo różnokierunkowych zmian m.in. powierzchni poszczególnych roślin uprawnych i pogłowia gatunków zwierząt inwentarskich, kształtowanych głównie przez uwarunkowania ekonomiczne, presja środowiskowa ze strony prowadzonej produkcji rolniczej w Polsce uległa zmniejszeniu. Nastąpiło to, w procesie intensyfikowania produkcji rolniczej przeciętnie w skali kraju. Zjawisko to świadczy o poprawie efektywności gospodarowania azotem w Polsce. |
| Abstract | The paper presents the assessment of organizational and productivity changes in Polish agriculture in the context of selected environmental impacts, i.e. the gross nitrogen balance. To indicate trends, changes between research from 2002-2004 and 2014-2016 were compared. Studies have shown that despite multi-directional changes in the area of particular crop plants and livestock husbandry animals, which have been shaped mainly by economic conditions, environmental pressure from agricultural production has decreased. This occurred despite the process of intensifying average agricultural production on a national scale. This phenomenon shows the improvement of nitrogen efficiency in Poland. |
