Streszczenie

In the paper the authors proposed a definition of food supply chains. The structure of the food chain and approaches of its assessment were also discussed. The authors indicated that it is necessary to conduct a research concerning the functioning of the food supply chains. Due to the nature of the food supply chains, especially to a temporal imbalance of supply and demand, quality requirements and exchange of quality information an important issue in the context of increasing the efficiency of agri-food companies may be raising the level of cooperation within in the chains.
